My favorite Champagne
 


What I have pleasure to discover and understand :


the heart of the Champagne region,  
controlled and guarantee of wine quality area,
its landscapes, made by the time,
a special climate,
a chalky soil and subsoil, its hillsides, its vineyards
planted with the three allowed varieties of grapes,
Chardonnay, Pinot noir and Pinot meunier,
the “Road of Champagne”,
its villages “Grand Cru” and “1er Cru”

where live and work  the growers
so
me of them making very high quality wines,
because they are passionate,
with a great respect of the soil,
with a reasoned growing of their vine,
with their expertise in wine vinification
and maturation methods
in order to value a “terroir”,
a type of grapes or several blended,





and, paralel,

where live and work the wine growers.

the Champagne Houses
,

mainly located in Reims and Epernay,
making the fame of champagne wines
all around the world, their history,
their traditions, their expertise,
their huge cellars and sometime their “Crayères”,
their “Prestige Cuvées”.

For everybody, the « méthode champenoise »

The art of blending the three grapes still wines
specific for each wine maker,
coming from the last harvest and different “crus”,
with reserve wines from previous harvests,
The magic of sparkling, the “prise de mousse”,
The long ageing of the bottles in the cellars,
“sur latte” (lying horizontally) ,
“sur pointe” (up side down)
Techniques of riddling and disgorgement,
The choice of the type of champagne,
according the dosage of the “expedition liquor”.

The méthode champenoise.

After these visits and the tasting of different champagne wines proposed in the Houses and Wine Growers Houses, and according your own sensorial faculties,
you will have a better idea of what can be a champagne wine,
- A blend of 2 or 3 grapes, Chardonnay or Pinot noir dominant,
- “Blanc de blancs” or “Blanc de noirs”, champagne from a special plot as a “Clos”,
- pink champagne , from a blend (d’assemblage) or a maceration (« rosé de saignée”),
- regular (non vintage) or vintage,
- “brut”, “demi-sec”, “extra brut” or “brut “nature”.

And say :
« this champagne is my favourite”

Because

“It’s this champagne I appreciate in a special occasion or celebration !”
“It’s this champagne which value the best dish and champagne wine agreement !”
